
I have heard all kinds of things lately about Coconut Oil. How you can use it in baking, to fry with, to make salad dressing, to make ketchup, and many other cooking uses. I also have heard how you can use it in many non-cooking related ways such as in lotion, hair moisturizer, soap, lip balm, skin moisturizer, and I even heard someone say that they used it to cure their baby’s cradle cap. Wow, this stuff sounds like the MacGyver of the kitchen – I had to try it!
Upon opening the jar I noticed that it had the consistency of Crisco, but I read that it changes from a solid to a liquid at 75 degrees, so if you just place the jar near the stove while cooking it will melt into a liquid! I made eggs for breakfast with a little coconut oil in the pan. I didn’t love it in my eggs as it did lend a little coconut flavor, but the kids ate it right up and asked for seconds. I knew then that I had found something special for them!
A recipe that I am excited to try is for homemade chocolate magic shell! My kids will go nuts for this stuff, and I love knowing what’s in it! Chocolate chips and coconut oil mix together to make magic! I have also heard that it is a great oil to use when popping popcorn – hello movie night!!

Favorite use for coconut oil: Diaper Cream. I usually keep a small jar on hand just for diaper rash since it’s the only thing that works for my kids.
